Eastcoast Baked Baby Trout Recipe

What You’ll Need: 

  • Eastcoast Lemon Juice 
  • Baby Ocean Trout 
  • Ginger 
  • Shallots 
  • Chilli 
  • Kaffir lime leaves 
  • Garlic 
  • Lemongrass 
  • Coriander 
  • Olive oil 
  • Salt 

Method: 

  1. Add to a blender – chopped up ginger, shallots, chillies, lime leaves, peeled garlic, lemongrass, coriander, Eastcoast Lemon Juice, a touch of salt and a little bit of olive oil 
  2. Preheat the oven to 220 degrees Celsius
  3. Lay baking paper flat on a tray 
  4. Smear the blended mixture onto the grease proof paper 
  5. Lay the trout onto the mixture 
  6. Add another layer of mixture on the trout 
  7. Wrap into a parcel, bake in the oven for 20 minutes and serve
