What You’ll Need:
- Eastcoast Lemon Juice
- Baby Ocean Trout
- Ginger
- Shallots
- Chilli
- Kaffir lime leaves
- Garlic
- Lemongrass
- Coriander
- Olive oil
- Salt
Method:
- Add to a blender – chopped up ginger, shallots, chillies, lime leaves, peeled garlic, lemongrass, coriander, Eastcoast Lemon Juice, a touch of salt and a little bit of olive oil
- Preheat the oven to 220 degrees Celsius
- Lay baking paper flat on a tray
- Smear the blended mixture onto the grease proof paper
- Lay the trout onto the mixture
- Add another layer of mixture on the trout
- Wrap into a parcel, bake in the oven for 20 minutes and serve
