Ingredients:
- Eastcoast Mango Juice
- Coconut Cream
- Uncooked prawns
- Coriander
- Eschallots
- Sliced fresh chili
- Kaffir Lime leaf
- Red onion
- Half fresh mango
- Lemongrass
- Cauliflower rice
- Fresh wedge of lime
- Olive oil
Method:
Into a smoking hot pan – add a splash of olive oil. Add lemon grass and sliced fresh chilli into the pan. Add lime leaf and sliced shallots into the pan.
Pour in some East Coast Mango Juice into the pan then add some coconut cream creating a mango coconut base.
As the sauce is reducing add some fresh uncooked prawns into the pan and give them a toss on a medium to low heat. Leave them to go a beautiful orange color while sizzling in the pan.
Place prepared cauliflower rice onto a plate and add the prawn mixture on top. Pour the remaining juice on top. Add a half of a fresh mango, coriander, and a wedge of lime.
