Ingredients:
- EastCoast Orange Juice
- Brown onion
- Fresh chilli
- Fresh Basil
- Fresh Garlic
- Can of finely chopped or crushed tomatoes
- Mussels
- Sprinkle of salt
Method:
In a frying pan that’s smoking hot – add olive oil, garlic, sliced onion and chillies.
Add the mussels into the pot and stir.
To the mussels, add the East Coast Orange Juice. Put the lid on and toss it around like popcorn. Leave it for 2 minutes and leave it to sit in the pan.
Add some crushed tomato and a handful of basil and give it a mix. Once it is warmed through and hot, add a sprinkle of salt.
Pour it into a bowl and enjoy it served with some toasted bread.
